Katie's Freedom Fudge

I love chocolate and I have always loved dessert.  Rather than deprive myself I've learned to adapt some of my favorite foods into healthier options.  Enter my raw, dairy free, gluten free, vegan and guilt free Freedom Fudge.  This recipe is super simple to make and also free of refined sugars.  It also includes dates and raw cacao two of my all time favorite healthy dessert ingredients.  Enjoy!


  • 1/2 cup raw cacao powder
  • 1/4 cup raw walnuts
  • 1/4 cup raw cashews
  • 1 1/2 cups loosely packed pitted dates
  • 2 tsp water
  • 1/4 tsp salt
  • 1/2 pure vanilla extract
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil


Combine the dates, walnuts and cashews in a food processor and pulse until relatively smooth.   Add in the remaining ingredients and continue pulsing until completely smooth.  Scrape down the sides as needed.  Mixture will be very thick.  When desired consistency is reached (adding more water if necessary a splash at a time) transfer to a square pan lined in wax paper or lightly greased.  Refrigerate for 2 hours and then slice.  Keep in refrigerator for up to 2 weeks or freeze for up to 2 months.  Enjoy!

*Tip: Lightly greasing your spatula will make the process of transferring to the dish go more smoothly.
