My Go To Power Snack

Chock full of vitamins, minerals and good fat, these energy bites are tasty and oh so good for you.  I whip them up once a week and have a snack at the ready anytime I need it.  They also make a great breakfast option when you are in a hurry.  You can vary the dried fruit and seeds as much as you like and substitute other nut butters if you have a peanut allergy.  

Cacao, Blueberry & Tart Cherry Energy Bites

Ingredients

  • 1 cup (dry) oatmeal
  • 1/2 cup peanut butter 
  • 1/4 cup dried tart cherries
  • 1/4 cup dried blueberries
  • 1/2 cup flax seed (whole)
  • 1/3 cup honey
  • 1/4 cup raw cacao powder
  • 2 tbs chia seeds (whole)
  • 1 tsp vanilla Extract

Recipe

Pour all ingredients into a food processor and mix until ingredients can be formed into balls (about 1-2 minutes).  If ingredients are too dry, try adding 1 tbs of peanut butter at a time until balls begin to form.  Use your hands to form dough into bite-size balls and place in the refrigerator.  Energy bites can be kept in the refrigerator for 1-2 weeks or frozen for several months.  Enjoy!
